FIELD: food industry.
SUBSTANCE: invention relates to production of rye-wheat bread varieties. Disclosed is a method for production of bread with addition of sugar-containing powder from potatoes dispersity of not more than 200 mcm; method comprises preparation of dough by mixing rye-wheat flour, yeast, water, salt, acidifying agent and sugar-containing powder of potatoes, obtained by drying the sugar-containing paste, dough fermentation, dividing into pieces, proofing and baking, sugar-containing potato powder is produced from sugar-containing paste mixed with rye or wheat flour at a ratio of 40:60 respectively and dried at 80°C for 5-6 hours to final humidity of 13-14%, and acidifier is added rye starter.
EFFECT: invention enables to increase content of reducing substances in sugar-containing powder of potatoes, high quality bread, as well as use non-traditional raw materials as sugar-containing component in production of rye-wheat bakery products, implementing proposed method allows to produce bread with improved quality characteristics, with a deep taste and aroma and increased food value.
