FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely, to processing marine mammals. Seal meat is cut into pieces of 500-600 g and treated with dry sodium chloride by rubbing. Then the stock is held to stand at ambient temperature for from 1 to 4°C for 40-72 hours followed by washing. Prepared seal meat and other components are ground and mixed. Finished mass is formed and sent to freeze at -25 to -30°C, packaged and stored at -18°C. As the components used seal meat, potatoes, vegetable oil, eggs, onions, garlic, spices, water and salt.
EFFECT: provides high-quality products with a high protein content, a complete set of essential and non-essential amino acids, polyunsaturated fatty acids, high in vitamin A and B vitamins and minerals.
