FIELD: food industry; production of meat semi-finished products.

SUBSTANCE: method of the production of frozen minced meat semi-finished products has been proposed, the said method involving the following: first chopped rabbit meat, pork fat, fresh onions and wheat bread hydrated in water in a ratio of 1:1 are mixed at a temperature of 4–6°C for 30–40 minutes in a minced mixer, then a chicken egg is added and at the last mixing table salt, dried garlic, ground black pepper, water are added, the total mixing should be continued until smooth which is 6–8 minutes, after that the products are formed, bread in breadcrumbs, frozen to obtain the target product, while the recipe components are taken in the following quantitative ratio, wt.%: 70.0–75.0 of rabbit meat; 5.0–10.0 of pork fat; 10.0–12.0 of hydrated wheat bread; 5.0–6.0 of fresh onions; 2.0–3.0 of breadcrumbs; 3.0–4.0 of chicken eggs; 1.8–2.0 of table salt; 0.16 of dried garlic; 0.1 of ground black pepper; the rest is water.

EFFECT: invention is aimed at creating a product from rabbit meat with the addition of pork fat, due to the rational use of meat raw materials, increasing the nutritional and biological value of the finished product, improving its structural and mechanical properties, as well as expanding the range of minced meat semi-finished products produced.
