FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of sausage made of seal meat. Method comprises the preliminary preparation of raw materials and components, which is used as seal meat, in the form of pieces of 400-600 g fish fillet, bacon, potato starch, onion, garlic, smokehouse flavor, spices, salt, sugar and water. Before chopping pieces of meat are ground to seal gyroscope with a mesh diameter of 12-16 mm. Chopping is carried out in two stages. On the first stage the comminuted seal meat, fillets and fish fat are loaded in a cutter, add onion, garlic, salt, sugar, spices and 50% water is treated to form a homogeneous mass that is then sent to maturation for 10-12 hours at temperature 10-15°C. On the second stage of maturing after stuffing a second cutter with the addition of potato starch and a smoke flavoring, previously dissolved in the remaining water until uniform structure stuffing. Semi-finished product is packed into the shell and is sent to the heat treatment.
EFFECT: method allows to get sausages from non-traditional raw material - seal meat.
