FIELD: food industry.
SUBSTANCE: method envisages treating animal meat, for example pork, with an antiseptic. As the antiseptic, the catholyte of the solution of 2 g/l of sodium sulfate and 0.1 g/l of glycine, or the catholyte of drinking water and 0.1 g/l of ascorbic acid, obtained in an electrolytic cell with a pH of 11-11.6, ORP - 200…-250 mV or with a pH of 9-10, ORP -100…-110 mV, respectively. Meat raw materials are stored for 3 days at a temperature of +3…+4°C.
EFFECT: improving the quality by protein content, reducing costs and expences for material resources, improving environmental safety, expanding the range of antiseptic products and the range of quality indices.
