FIELD: fat and oil industry.
SUBSTANCE: invention relates to methods of analysis of quality of sunflower lecithins and can be used in oil and fat industry. Method of determining content of acetone non-soluble substances (phospholipids) in sunflower lecithin includes sampling of lecithin, preparation of sample by thermal conditioning, placing sample into sensor for pulsed NMR analyser, measurement of signal amplitudes of nuclear-magnetic proton relaxation of third (A3) and fourth (A4) component lecithins in standard units and calculating content of acetone non-soluble substances (phospholipids) in lecithin. At that, nuclear-magnetic proton relaxation of first (A1) and second (A2) component lecithins signals amplitude is measured in standard units. Then amount of amplitude (ASYS.) signals of first (A1), second (A2), third (A3) and fourth (A4) components in standard units. Then fraction of amplitudes of signals of third (A3) and fourth (A4) components in percentage as ratio of values of A3 to value of ASYS, multiplied by 100, and ratio of values of A4 to the value of ASYS., multiplied by 100, and content of acetone non-soluble substances (phospholipids) in sunflower lecithin (Fp.) in percentage is calculated by formula: Fp.=0.8484(A3+A4)+7.35.
EFFECT: high accuracy and reproducibility of results of determining content of acetone non-soluble substances (phospholipids) in sunflower lecithin.
