FIELD: food industry.
SUBSTANCE: method involves taking the sample of oil, preparation of oil sample for analysis and calculation of oleic acid using the formula, the preparation of the oil sample is performed using its thermal conditioning at the temperature (-8±0.2)°C for 1 hour and then the oil sample is put into the sensor of pulse nuclear magnetic relaxation analyzer, measure initial signal amplitude of nuclear magnetic relaxation of oil triacylglycerol protons of all system (Asys) in percents, signal amplitude of nuclear magnetic relaxation of oil triacylglycerol protons in liquid phase (ALF) in percents, and the signal amplitude of nuclear magnetic relaxation of oil triacylglycerol protons in solid phase (ASF) in percents according to formula ASF=Asys-ALF and the oleic acid content in olive oil in percents (Col) is calculated using formula: Col=0.896-ASF+28.7.
EFFECT: simplified and enhanced safety of oil analysis.
