FIELD: chemistry.
SUBSTANCE: invention relates to oil and fat industry. The method involves taking an oil sample, preparation of the sample for analysis and calculation of content of oleic acid using a formula. The oil sample has mass of (6.00±0.02) g and is prepared by thermostatting at temperature (-4±0.2)°C for 1 hour, after which it is placed in the sensor of a pulsed NMR analyser. Amplitude of nuclear magnetic relaxation signals of protons of triacylglycerines of the first and second components of the oil is measured in conventional units. The sum of amplitudes of nuclear magnetic relaxation signals of protons of triacylglycerines of the first and second components of the oil is calculated, and content of oleic acid in the olive oil in percentages (O) is calculated from formula: O=-0.0407·(A1+A2)+87.7, where A1 - is amplitude of NMR signals of protons of triacylglycerines of the first component of the oil in form of separate molecules, which are a liquid phase; A2 - is amplitude of NMR signals of protons of triacylglycerines of the second component of the oil in form of associates of lower order molecules, which are a liquid phase.
EFFECT: invention significantly cuts on time for determination, excludes complex sample preparation and use of toxic chemical reagents.
