FIELD: food industry.
SUBSTANCE: invention relates to flour-and-cereals industry, in particular, to cereal products production. Buckwheat groats cleared of impurities are loaded into the steamer and steamed under pressure equal to 0.2…0.3 MPa during 2...5 minutes. The steaming process is completed when kernel moisture content is within the range of 20…22%. The grains are softened during 25…30 minutes and supplied into the flow-dryer where film moisture is removed of the grains shell, the heating surface temperature equal to 180…200°C, during 25…30 sec. The grains shell is slightly dried till the moisture content is within the range of 10…12% while the kernel moisture content is within the range of 20…22%. The grains are separated into fractions and shelled; the shelling products are separated.
EFFECT: preliminary moistening and prolonged softening operations exclusion allows to simplify the method, reduce energy intensity of the process and kernel crushing during shelling.
