FIELD: food industry.
SUBSTANCE: invention relates to production method for preserved concentrates of first course dinner dishes. Method comprises preparation of recipe ingredients. Prepared potatoes, parsley roots, pumpkin, cauliflower and paprika are cut and blanched. Carrots are blanched and cut. Fresh ornamental cabbage is chopped and frozen. Cooking peas and beans till weight increases by 150 %. Cut bulb onions and parsley. One mixes listed components with tomato paste, part of salt and citric acid. Prepared pork is chopped. Rice is boiled until mass doubles. One performs mixing of pork, rice, chicken eggs and remaining salt to produce mince and mince moulding to produce balls. Meat balls, prepared mixture and bone broth are packed, sealed and sterilised.
EFFECT: method allows to get new canned food using nonconventional vegetable raw materials.
