FIELD: food industry.
SUBSTANCE: method for preparing a beverage comprises fermentation of a fruit or vegetable medium, wherein the yeast used for fermentation is frozen using a cryoprotectant. Yeast is prepared in a fermentor, concentrated, and a cryoprotectant is added. Mixture is then frozen at -50 °C. Frozen yeast obtained can be directly added, for example, to grape juice, as it does not require rehydration because the yeast was not dehydrated in the production process.
EFFECT: obtaining a wine product by inoculating yeast into fruit juice.
