SUBSTANCE: method of producing vegetable juice is described, the said method includes fermentation of a vegetable substrate Pichia kluyveri and fermented vegetable juice obtained according to the method. The following is also proposed: strains of Pichia kluyveri that can be used in the fermentation of vegetable substrates that can be further processed to produce beverages.
EFFECT: invention makes it possible to obtain beverages with an improved flavor profile, in particular, a weakened groundy flavor.
