SUBSTANCE: frozen or lyophilised direct insertion culture includes one or several cryoprotectors chosen from group, consisting of inosine-5'-monophosphate (IMP), uranosine-5'-monophosphate (UMP) and cytidine-5'-monophosphate (CMP) and inosine. Method of frozen direct insertion culture production and method of lyophilised direct insertion culture production include addition of one or several above-mentioned cryoprotectors to concentrated starter of viable microorganisms, freezing and suitable packing of the material. To produce fermented product, initial lactic material is cultivated with any produced frozen culture. Starters of invention represent lactic bacteria, e.g. Lactococcus ssp, and others.
EFFECT: stabilisation of any metabolic activity of culture and prevention of effect of culture freezing.
