FIELD: food industry.
SUBSTANCE: invention relates to method and system for forming mixture of drink, containing protein. Method involves heating of beverage in heat exchanger, transmitting beverage in circuit of retention, located outside heat exchanger, denaturing of protein in circuit of holding for period of holding after beverage heated in heat exchanger, so that occurs denaturing outside heat exchanger to prevent contamination of heat exchanger, and sterilisation of beverage in additional circuit of retention. pH of beverage is in isoelectric range of protein. System comprises container forming beverage, heat exchanger for heating of beverage and first circuit of retention, separate from heat exchanger, which is configured to content of drink during holding for denaturation of protein in beverage and additional circuit of holding for sterilisation of beverage.
EFFECT: invention allows more homogeneous product quality and manufacture product with improved taste.
