FIELD: food industry.

SUBSTANCE: in order to obtain a food powdered milk product with the reduced carbohydrate content, that has the ratio of carbohydrates to protein not more than 1.1, the protein content of at least 45% by the dry substance and the ash-to-protein ratio substantially similar to that of the milk raw material used as an initial material, the method is carried out as follows. Carbohydrates are removed from the milk raw material to obtain a food milk composition with the reduced carbohydrate content. The composition is concentrated into a powdered product. The use of dry milk with the ratio of carbohydrates to protein not more than 1.1 and the protein content of at least 45% by dry substance to produce a recovered milk product with the reduced carbohydrate content. The method for obtaining a recovered milk product with the reduced carbohydrate content includes the recovery of milk powder with the ratio of carbohydrates to protein of not more than 1.1 and the protein content of at least 5.4% of dry substance by a liquid and optionally other ingredients.

EFFECT: group of inventions allows to obtain a product with a good taste, corresponding to the taste of ordinary milk, in which the unwanted Maillard reaction is suppressed.
