FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A composition of chopped semi-finished products with a protein-fat emulsion containing raw meat, fresh chopped onion, salt and ground black pepper is proposed. It contains broiler chicken meat as a meat raw material, additionally contains chicken eggs, potato starch, ground allspice and ice water. The protein-fat emulsion is made of chicken thigh fillet with skin, chicken liver, boiled chicken stomachs, boiled chicken hearts, whey protein concentrate, chickpea extrudate and ice water.
EFFECT: invention provides an increase in the nutritional value of the semi-finished product, an improvement in structural and mechanical properties, a reduction in heat treatment losses and an increase in product yield.
