It contains broiler chicken meat as a meat raw material, additionally contains chicken eggs, potato starch, ground allspice and ice water. The protein-fat emulsion is made of chicken thigh fillet with skin, chicken liver, boiled chicken stomachs, boiled chicken hearts, whey protein concentrate, chickpea extrudate and ice water.

EFFECT: invention provides an increase in the nutritional value of the semi-finished product, an improvement in structural and mechanical properties, a reduction in heat treatment losses and an increase in product yield.
