FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the production of boiled sausage products, and is intended for use in meat processing plants. Ham contains 1st grade trimmed beef, semi-fat trimmed pork, protein-fat emulsion, nitrite salt, food phosphates, granulated sugar and ice water, and as spices it contains ground black pepper or ground white pepper, ground allspice and fresh peeled minced garlic. The protein-fat emulsion is made from 30 wt.% chicken thigh fillet with skin, 3 wt.% chicken liver, 6 wt.% boiled chicken stomachs, 6 wt.% boiled chicken hearts, 7.5 wt.% whey protein concentrate, 39 wt.% raw apple pomace puree and 8.5 wt.% ice water. The quantitative ratio of the initial components of ham has been selected.
EFFECT: increased nutritional value of the product, improved structural and mechanical properties.
