FIELD: food industry.
SUBSTANCE: invention relates to food industry. Dry mixture for soft ice-cream production includes dry defatted milk, sugar sand, an emulsifier, vegetable fat, a stabilizer, a functional additive and additionally succinic acid. Herewith as the functional additive it contains a mixture of chlorella and walnut membrane powders taken in the ratio of 5:1. As the vegetable fat it contains dry coconut fat, as the emulsifier there is egg powder. Components are taken at the specified weight ratio. Preferably walnut membrane powder is obtained by grinding the membranes in a disintegrator to the fraction size of 0.2 mm.
EFFECT: invention allows to produce ice cream of preventive purpose with preservation of acceptable for consumers organoleptic characteristics.
