FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry and can be used in production of confectionary products. Proposed is a functional glaze containing a sweetener, a milk product, a functional vegetable product, previously melted cocoa butter, an emulsifier-thinner in the form of lecithin, an aromatic component, herewith as the emulsifier-thinner it additionally contains "Choline" phospholipid product taken in the amount of 20-35 % of the content of lecithin, as the milk product it contains dry milk cheese whey, as the functional vegetal product it contains a mixture of powder from elderberries and dry aloe extract taken in the ratio of 5:1, as the aromatic component it contains essential oil of Elsholtzia, as the sweetener there is a mixture of lactitol and erythritol in the ratio of 1:1, at the following initial components content in the mixture, wt%: milk product 18-24; functional vegetal product 12-18; cocoa butter 40-45; emulsifier-thinner 0.5-0.9; aromatic component 0.05-0.07; sweetener 18.25-24.43. Herewith the powder of elderberries is obtained by drying elderberries till the moisture content is 7-9 % with their further grinding in a disintegrator into the particles sized 20 µm.
EFFECT: invention provides reduced caloric content and sugar capacity, improved rheological and organoleptic properties of the glaze.
