SUBSTANCE: invention relates to food industry. Disclosed is a composition for the preparation of confectionary glaze, which contains beef fat, sugar, a dry milk product, a flavouring agent. Dry milk product is preferably a product selected from a group including dry milk, dry milk cheese whey. Flavouring agent can be a vanilla extract. Sugar is preferably powdered sugar.
EFFECT: increased stability of confectionary glaze, improved rheological and organoleptic properties.
