FIELD: food industry.
SUBSTANCE: invention relates to food industry. Frosting of functional purpose includes a sweetener, milk product, functional vegetable product, pre-melted cocoa butter, emulsifier-thinner in form of lecithin, wherein as emulsifier-thinner, frosting additionally contains phospholipid product "FEIS", taken in amount of 25 % of content of lecithin, milk product is milk whey protein concentrate, functional vegetable product is a mixture of dry extract of aloe juice and powder of amaranth seeds, pre-roasted at temperature of 110-120 °C and ground on ball mill to particle size of not more than 30 mcm, taken in ratio 1:10, sweetener is a mixture of lactitol and dry extract of licorice, taken in ratio of 12:1.
EFFECT: frosting has reduced caloric content and sugar capacity, as well as improved rheological and organoleptic properties.
