FIELD: agriculture.
SUBSTANCE: method of preparing grain material for production of sugary products comprises exposing raw material to infrared (IR) radiation generated by a KGT 220-1000 lamp: wheat grains, rye - for 15-20 seconds to physical breakdown of grains with formation of a porous structure. Then grain is added in portions for 10-15 minutes in a rotary-pulsation device with previously filled with water to ratio of wheat grains and water of 1:2, rye and water 1:4 and subjected to hydromechanical treatment until a homogeneous suspension is obtained and its temperature is 55-65 °C.
EFFECT: invention enables to reduce duration of technological process and prevent microbiological contamination of product.
