FIELD: food industry.
SUBSTANCE: invention relates to industrial processing of food products, namely, to physical treatment and preparation of preventive water and beverages, and can be used in food industry in production of products based on wine, wine water and medical plants extracts. Method is characterized by placing wine into vacuum evaporator, where alcohols are removed and non-alcoholic wine is obtained with alcohol content no more than 0.5%. From obtained non-alcoholic wine part of water vapor is removed by vacuum evaporation and condensed in condenser-cooler, thus forming condensed wine water fed into vacuum extractor, where medical plants are also loaded, where on the base of obtained wine water as a result of vacuum extraction extracts medicinal plants are obtained, then extraction process is continued, during which a part of water vapor is removed from obtained extract, that is condensed in the second condenser-cooler, forming at the outlet condensed functional water from medical plants.
EFFECT: it allows to expand the range of obtained functional waters.
