SUBSTANCE: invention is applicable to processes of both lyophilization and “vacuum” drying of products in the food, pharmacological and cosmetic industries. A system for dehydration of a food, or pharmacological, or cosmetic product contains a vacuum chamber, a heat distribution shelf of a cooling and heating system for the product, a vacuum pumping system using at least one Roots pump and at least one oil-free fore-vacuum pump, interconnected by pipes, and an additional cooler gas environment, located in front of the Roots pump, as well as a cooler-condenser of the gas environment, located behind the Roots pump, while the dimensions of the flow sections of the pipes correspond to the size of at least the flow area of the applied Roots pump. Methods for dehydrating a food, or pharmacological, or cosmetic product using the system described above consist in placing the product on at least one heat distribution shelf of the cooling and heating system of the product in a vacuum chamber, reducing the residual pressure in the vacuum chamber, and in the case of lyophilization, the residual pressure in the vacuum chamber is reduced to a pressure of no more than 611 Pa, and in the case of “vacuum” drying, the residual pressure is reduced to a pressure of at least 611 Pa, evaporated water vapor is removed through the cooler in front of the Roots pump, then through the Roots pump and then through the cooler-condenser and the forevacuum oil-free pump, while in the cooler the temperature of vapors and gases is reduced to a temperature of at least plus 1 °C, in the cooler-condenser the temperature of vapors and gases is reduced to a temperature of at least plus 1 °C and from the cooler-condenser, the condensed liquid is removed into a sealed drainage container, and the remaining liquid in the vapor and liquid phase is removed from the oil-free fore-vacuum pump.
