FIELD: nanotechnology.
SUBSTANCE: invention relates to nanotechnology, in particular, to a method of producing nanocapsules of green tea, characterised by using high-or low-etherified apple or citrus pectin as a shell, and by using green tea extract as a core, the method comprises adding the green tea extract to the pectin suspension in ethanol in the presence of 0.01 g of E472c surfactant, core: shell weight ratio in terms of dry substance is 1:3, then while mixing at 1,300 rpm ethyl acetate is being added, the obtained suspension is being filtered and dried at room temperature.
EFFECT: method provides simplifying and accelerating the process of nanoencapsulation, while reducing accompanying loss.
