FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Whey is collected. Whey is ultrafiltered for removal of lactose and water using ceramic membranes with pore diameter of 0.01 mcm at a temperature of 15 °C and pressure of 0.3 MPa. Before ultrafiltration whey is not subjected to application of chitosan. Concentrate is fed for microfiltration using ceramic membranes with pore diameter 0.8 mcm and is carried out at a temperature of 15 °C and pressure of 0.2 MPa, where a considerable part of fat is removed. Obtained solution of protein and lactose is fed for diafiltration, where ceramic membranes with pore diameter of 0.01 mcm are used and is carried out at a temperature of 15 °C and pressure of 0.3 MPa, where lactose is washed with an additional amount of water. Product is packed.
EFFECT: invention is aimed at reducing time required for production of whey protein concentrate, simple process.
