FIELD: dairy industry; biotechnological industry.
SUBSTANCE: method for production of a protein composition from colostrum includes defatting of colostrum, settling the casein fraction by removing microflora from it by means of the first microfiltration and obtaining permeate P1, which is subjected to second microfiltration to obtain permeate P2 enriched with lactoferrin, and retentate R2 enriched with immunoglobulins. R2 retentate is further subjected to diafiltration using a membrane which separates retentate R2 into peroxide P3, containing lactose and mineral salts, and retentate R3 containing immunoglobulins, wherein all steps of the method are carried out at temperature lower than the temperature of denaturation of lactoferrin and immunoglobulins; retentate R3 is subjected to ultraviolet treatment, wherein retentate is mixed during processing; obtained retentate R3 and permeate P2 are mixed to produce a protein composition.
EFFECT: invention enables to obtain a bacteriologically pure hypoallergenic product with maximum possible preservation of native properties of the raw material, which can be suitable for preventive dietary nutrition, as well as for preparing preparations having immunomodulatory effect.
