SUBSTANCE: invention relates to the field of biotechnology, in particular, to the dairy industry. A method for obtaining milk protein concentrate from skimmed milk is proposed, involving the exposure of skimmed milk at a temperature of 1-6°C for 12-48 hours and a membrane cascade including a microfiltration stage with ceramic membrane elements with a pore size of 800 nm, a microfiltration stage with ceramic membrane elements with a pore size of 100 nm, a diafiltration stage with ceramic membrane elements with a pore size of pores of 10-20 nm, as well as hydrolysis of lactose residues using beta- galactosidase and spray drying of the hydrolysis product at a temperature above 130°C to obtain a dry milk protein concentrate. The invention also concerns the use of the specified membrane cascade to obtain a milk protein concentrate free from the presence of residues of veterinary drugs containing lactose and β-casein in trace amounts.

EFFECT: invention makes it possible to obtain a hypoallergenic milk protein concentrate, free from the presence of veterinary drugs, with a lactose content of no more than 0.1% and beta-casein in trace amounts from milk with residual contents of veterinary drugs.
