FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to production of instant noodles. Uncooked noodle strings, prepared from noodle dough, containing from 0.5 to 6.0 wt% powdered fat or oil and/or powder emulsifier in relation to weight of powder of main raw material, is treated with superheated steam. Temperature of superheated steam is 120–200 °C. Invention relates to instant noodles produced as described above.
EFFECT: invention enables to produce instant noodles with flexible texture with soft surface and moderately elastic core.
