FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to methods for producing instant noodles. Method includes the step of carrying out the heating process in the chamber at a temperature within the chamber of from 130 to 220 °C, where the heating process is carried out in the atmosphere at absolute humidity, which differs from the absolute humidity of the steam at atmospheric pressure at this temperature by -5 to +10 %. Alternatively, the method includes the step of producing raw noodle filaments, a step of carrying out the process of heating the cut raw noodle filaments, and drying the noodle filaments after the heating process. Step of carrying out the heating process is carried out many times, and the initial step of the above process is carried out in the chamber at a temperature within the chamber of from 130 to 220 °C in the atmosphere at absolute humidity, which differs from the absolute humidity of the vapor at atmospheric pressure at this temperature by -5 to +10 %.
EFFECT: method allows to produce instant noodles that has a taste and texture similar to fresh noodles, a soft surface and dense cores of noodle filaments.
