FIELD: food industry.
SUBSTANCE: grain distillate from wheat and / or rye and / or corn, with the strength of not more than about 94.8% by volume is diluted with corrected water up to the strength of 54-56% by volume, is filtered on the "Platinum filtering" plant at a rate of 25-60 decalitres / h per a filter element with a height of 250 mm. The distillate is infused on oak chips treated at a temperature of 150°C-250°C, at the rate of 20-30 g/l for 20-24 days, with periodic dosing of oxygen. The waste wood chips are separated from the distillate, poured with corrected water, at the ratio of 1:10-1:20, infused for 2-3 days at 25-30°C, and the wash water is decanted. The distillate is diluted with wash water or with the mixture of wash water and corrected water at a ratio of 1:0-1:20, and blended with addition of sugar caramel colour. The blend is cooled, filtered, subjected to rest, and the whiskey is bottled.
EFFECT: invention allows to improve the organoleptic and physico-chemical characteristics of whiskey due to increasing extractive and aromatic components from the chips and using platinum filtration.
