FIELD: alcoholic beverage industry.

SUBSTANCE: invention relates to alcoholic beverage industry. Grain distillate with 80 vol. % produced from maize is divided into three parts and diluted with treated water respectively to 50 vol. %, 55 vol. % and 60 vol. %. Each part of the diluted distillates at temperature of 20–22 °C is treated with active carbon VSK, decanted from coal and filtered. Then they are treated with active birch charcoal BAU-A, and the rest are held in contact with coal. Distillates are decanted and filtered, the treated distillates are mixed in ratio of 0.8:0.7:0.5:0.9:0.6:1. Mixture of distillates is maintained on high-burning American oak chips of EkoViN AN in amount of 15–20 g/dm3 at temperature of 40–45 °C for 30–40 days with periodic stirring 2 times day for 20–30 minutes. For preparation of whiskey aged distillates are drained from the surface of oak chips, filtered through an ash-free paper filter and diluted with treated water to 40 vol. %, then left to rest for 14 days.

EFFECT: invention allows to enhance organoleptic and physical-chemical properties of the ready product.
