FIELD: food industry.
SUBSTANCE: invention relates to food industry and biotechnology. Described is a method for intensification of mass exchange processes for vegetable raw materials. Method includes preliminary thermobaromechanical treatment of vegetable raw material, which involves moistening raw material, stepped heating from 20 to 140–220 °C for 20–120 s at pressure of 50–200 atm, reducing pressure to 1 atm and drying, which enables to obtain highly porous mesh granules, bulk density of which is not less than 1.25 times lower than bulk density of starting material, mixing pretreated raw materials with an agent which facilitates mass exchange process (for example, extraction, hydrolysis, fermentation, mutual enrichment, changing organoleptic parameters), to obtain desired end products of mass exchange processes, where mass exchange processes occur directly in porous granulated product.
EFFECT: invention speeds up mass exchange processes, reduces volume of required for liquid phase for said processes, increases output of end products.
