FIELD: food industry.
SUBSTANCE: invention relates to food, microbiological and fodder industry. Described is a method of processing grain flour, legumes and oilseeds or mixture thereof for enzymatic processing in production of protein hydrolysates, including grinding said flour to particle size of at least one dimension less than 50 mcm, provided that not less than 50 % of said particles have a size less than 25 mcm.
EFFECT: invention increases output of protein hydrolysate.
