FIELD: biotechnology.
SUBSTANCE: soybean flour is treated by the barothermal method, including grinding of the said flour to a particle size less than 50 microns in at least one dimension, provided that at least 50% of particles have a size less than 25 microns. Extraction is performed with 60-80% ethanol or water at neutral pH to obtain an extract of soluble substances. The soluble substances extract is concentrated to obtain molasses. The molasses is treated with an organic solvent immiscible or partially miscible with water at a ratio of 1:1-1:5, acidified with food acids to acidic pH range to obtain a solution of oligosaccharides and isoflavone concentrate content with the content of 15-30%. An isoflavone concentrate with the content of 40-60% is obtained by purification using ion exchange chromatography.
EFFECT: improved method for oligosaccharide and isoflavones fractions production from soy flour, extraction using not only water-alcoholic solutions, but ordinary water at neutral pH to produce an aqueous molasses, process simplification.
