FIELD: food industry.
SUBSTANCE: method comprises treating the prepared lingonberries with carbon dioxide in sub- or supercritical state, at the temperature of 20-60°C, the pressure of 100-450 atm, the raw material particles size being 0.2-1 mm. The carbon dioxide flow rate is 5-50 kg/kg of raw material, the extraction lasts from 20 minutes to 4 hours.
EFFECT: invention allows to select oil from lingonberry fruits in high yield, up to 4% by weight of the raw materials, while preserving the quality of the product obtained and in the absence of difficult recyclable waste and byproducts.
