FIELD: food industry.
SUBSTANCE: invention refers to food industry. The food product comprises a whole grain component having flavor characteristics from about 0.05 to about 5 wt.% of 1,3-propanediol based on the whole grain component weight. The food product has modified flavor characteristics, such as wheat and rancid, relative to a comparable food product which does not contain 1,3-propanediol. Use of 1,3-propanediol in food products may contribute to prolongation of perceptible wheat and/or rancid flavors during the corresponding product shelf life.
EFFECT: invention refers to the food products taste characteristics improving method, which comprises mixing the whole grain component and 1,3-propanediol in the above-stated amounts.
