FIELD: biotechnology.
SUBSTANCE: invention relates to Triticum aestivum wheat grain having an increased amylose content as compared to wild type wheat grain, to the Triticum aestivum wheat plant which produces a grain that has reduced level or activity of crude SBEII protein, and also to a method for producing said grain. Flour containing starch is also disclosed, that has amylose content of 50% to 88.5% (w/w) and has a reduced level or activity of the crude SBEII protein, food ingredient and food product containing the said flour, as well as method for producing said food product. The invention also relates to method for screening a wheat plant or wheat grain for selecting a grain or a plant producing a grain that has an amylose content of 50% to 88.5% (w/w) as a proportion of total starch in the grain.
EFFECT: invention makes it possible to efficiently produce wheat grain having an increased amylose content as compared to wheat of wild type.
