Also the following is disclosed: a food ingredient and a food product derived from the said grain; a composition for production of the said food product or food ingredient. The following is disclosed: the use of the specified grain to obtain flour; a method of obtaining wheat; wheat grain screening method; a method of production of a food product from the specified grain; a method of obtaining starch from the specified grain.

EFFECT: invention makes it possible to effectively obtain wheat grain of the Triticum aestivum species with a high content of amylose, fructan, β-glucan, arabinoxylan and cellulose compared to wild-type wheat grain.
