FIELD: food industry.

SUBSTANCE: invention relates to confectionery industry. A method of producing a multilayer confectionery shell, comprising the stages of: (i) applying a first edible liquid into the mould cavity; (Ii) compressing the first edible liquid to the mould cavity wall using a die characterized by a surface temperature below the solidification temperature of the first edible liquid in order to shape and to provide at least partial solidification of the first edible liquid in the mould cavity; (Iii) removing the die from the mould cavity; (Iv) applying the second edible liquid into the mould cavity; and (v) compressing the second edible liquid to the layer formed of the first edible liquid by means of said die at a surface temperature below the solidification temperature of the second edible liquid in order to shape and to provide at least partial solidification of the second edible liquid in the mould cavity. Wherein at stage (ii) said die is pressed into the first distance into the mould cavity, and at stage (v) pressing said die is stopped at the first distance, and wherein the die used at stage (ii) represents the same die used at stage (v).

EFFECT: invention allows using one die when manufacturing multi-layer confectionery products, thereby reducing the work time as well as reducing the equipment costs.
