FIELD: food industry.
SUBSTANCE: invention relates to production of shells of confectionary products using cold forming. Disclosed is a method of producing a confectionary shell including steps: (i) depositing into a mould cavity an edible liquid and one or more pieces of solidified edible material having a different composition to that of edible liquid; (ii) pressing edible liquid against wall of mould cavity using a stamp having a surface temperature below solidification temperature of edible liquid, so as to shape and at least partially solidify edible liquid in mould cavity and cause part of edible liquid to be ejected from mould cavity wherein at least part of ejected edible liquid is contiguous with edible liquid inside mould cavity; (iii) removing stamp from mould cavity and (iv) removing edible liquid ejected from mould cavity or material formed from ejected edible liquid by passing scraping means outwardly over boundary of mould cavity in two or more different outward directions. Invention also discloses a confectionary shell obtained using said method, and a confectionary product having said confectionary shell.
EFFECT: production of multilayer confectionary shells and/or confectionary shells containing inclusions.
