SUBSTANCE: composition is proposed for manufacturing gingerbread with biologically active additives, containing wheat flour of the highest grade, granulated sugar, sodium bicarbonate, ammonium carbonate and melange, wherein it additionally contains natural honey, margarine and powder from vegetables and/or fruits or berries, obtained by means of drying the initial raw materials in two stages. At the first stage, drying is carried out to the residual humidity of 30-35% at the temperature up to 90°C, and at the second stage - to the residual humidity of 6-8% at a temperature not exceeding 40°C, with the simultaneous disintegration of the materials to be processed. The composition contains carrot, pumpkin, Jerusalem artichoke, melon, apple, quince, sea-buckthorn, banana, apricot powders.

EFFECT: obtaining gingerbread with the increased content of natural vitamins and antioxidants.
