FIELD: food industry.

SUBSTANCE: method of marinating large pieces of meat and poultry for cooking shish kebabs and grilling, preparing a marinade from three components - a dry mixture, water and deodorized vegetable oil at the ratio of 1:2:1, respectively. At the first stage, the dry mixture consisting of food salt and complex food additives "Kobi Fom Gel" and "Everfresh" is mixed with water, and the resulting brine is injected into large pieces of meat using a syringe. At the second stage, the dry mixture including the spice mixture "Provencal herbs", a complex food additive "Grilmauste", sugar and ground black pepper, is mixed with deodorized vegetable oil, and brine-filled pieces of meat are placed in the resulting mixture and held therein for at least 45 minutes.

EFFECT: improving the quality of large volume of marinated meat while increasing the productivity of marinating.
