FIELD: food industry.
SUBSTANCE: food product is manufactured by means of preparing pears and apples. Inedible parts and peel are removed. The fruits are cut into slices with the thickness of 5-8 mm, treated in a solution containing 60% by weight of natural sugar and 10% by weight of grapevine extract, at the temperature of 27-30°C for 4 hours. The sublimation drying is carried out till the residual humidity is equal to 4-5%. The food product is packaged in an oxygen-free medium into bags of combined polymer-foil-polymer material.
EFFECT: target product has a unique harmonious combination of appearance and gentle porous consistency, the taste and aroma of pears and apples and grape raw material, has the directed antioxidant effect, has high nutritional value.
