SUBSTANCE: method includes cutting, boning, trimming, chopping meat raw material, chopping onions, preparing forcemeat, stirring to a homogeneous mass, shaping meat chopped semi-finished products, breading in breadcrumbs, packaging and freezing. In the forcemeat formulation, hydrated inulin obtained from the mixture of wild plants - high chicory and elecampane - is introduced in the amount of 3.0-5.0% of the total weight of the forcemeat. The quantitative ratio of the ingredients is selected.
EFFECT: obtaining high-quality meat products with high nutritional value.
