FIELD: meat industry.

SUBSTANCE: invention relates to meat industry, in particular to production of dietary meat and vegetable products. Method includes preparation and grinding of meat or meat and vegetable raw materials, preparation of minced meat by mixing meat or meat and vegetable raw materials with the introduction of the fucus algae. Fucus pre-hydrated and injected into a cutter in a ratio of 1:3–3.5 in the amount of 1.0–1.2 % of the total mass of raw materials. Then the curing and other ingredients are introduced, as well as the composition of a food additive of the following composition: essential oils and/or oleoresins of spicy aromatic plants, maltodextrin and/or glucose, monosodium glutamate and/or a mixture of monosodium glutamate and inosinic acid, starch at a certain ratio of components. At the last stage of cooking stuffing, fresh peeled onion is added. Mixture is molded and sent for subsequent cooling or freezing.

EFFECT: product is enriched with biologically active substances, obtaining a good quality product and increasing the shelf life, expanding the assortment of meat, meat and vegetable chopped semi-finished products and culinary products.
