FIELD: food industry.

SUBSTANCE: low-carbohydrate baking mixture in the form of cakes includes the solvent cake meal flour from Amaranth seeds, melange, ammonium carbonate, sweet component, salt cocking and nutritive, and functional additive. Additionally contains pensaca flour, taken in relation to the solvent cake meal flour from Amaranth seeds in the ratio1: 6, as the sweet component contains the grape sugar dextrose, and as the functional additive contains the inulin from the Jerusalem artichoke tubers. The components in the starting mixture are used in the following ratio, wt %: mixture of solvent cake meal flour from Amaranth seeds and pensaka seeds 56-58; melange 18-20; ammonium carbonate 0.09-0.12; grape sugar dextrose 21-22; salt cooking nutritive 0.1-0.18; inulin from the Jerusalem artichoke tubers 1.8-2.7.

EFFECT: invention allows to increase the prophylactic properties, the nutritional value of products, to increase the content of dietary fiber, to reduce the carbohydrate content in the product, to improve the structural and mechanical properties.
