SUBSTANCE: invention relates to production of flour confectionery products. Disclosed is composition for production of functional purpose sugar cookie, containing flour mixture containing wheat flour, sweetening agent in form of sugar, butter, condensed milk, culinary food salt, sodium bicarbonate, ammonium carbonate, vegetal additive and water in amount that ensures ready dough moisture content of 15-17%, wherein flour mixture additionally contains flour from amaranth seeds CO2-extraction cake, taken with wheat flour at ratio of 1:6. In addition, sweetening agent is represented by palatinose, taken in ratio with sugar, as 3:2, additionally contains cryo-powder of cola nuts, and vegetal additive contains orange dietary fibre, with following ratio of initial components in mixture, wt%: mixture of wheat flour and flour of amaranth seeds CO2-extraction cake - 26.0-35.0; mixture of sugar and palatinose - 10.0-15.0; butter - 12.0-15.0; condensed milk - 2.0-5.0; cola nuts cryo-powder - 2.0-4.0; orange dietary fibre - 18.0-21.0; ammonium carbonate - 0.1-0.3; sodium bicarbonate - 0.8-1.0; food culinary salt - 0.5-0.7; water is balance.

EFFECT: invention ensures development of sugar cookie of preventive purpose formula, as well as enlarging range of similar purpose flour confectionary products.
