FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry and can be used in production of cakes of preventive purpose. Disclosed is dry mix for preparation of cakes for dietary meals, including wheat flour, sugar sand, egg product in form of melange, ammonium carbonate, culinary food salt and functional additive, wherein it additionally contains flour from CO2-amaranth seeds extraction cake, taken in ratio with wheat flour as 1:11, as egg product additionally used is powder of quail eggs, taken in ratio 1:1 as with melange as a functional additive contains composition of pumpkin cryo powder and biocomplex "Rekicen RD" in ratio 10:1, with the following ratio of components in initial mixture, wt%: mixture of wheat flour and flour of CO2-amaranth seeds extraction cake 46-50; egg product 20.5-23.0; sugar sand 20.32-22.63; food culinary salt - 0.09-0.12; ammonium carbonate 0.05-0.08; functional additive 8.2-9.7. Pumpkin cryo powder is obtained by treating cut pumpkin pieces ultrahigh frequency electromagnetic field with frequency 2,200±10 MHz, power 250-350 W for 1.5-2.0 minutes, followed by drying up to 8-10 % moisture content and grinding in cryo mill to particle size of not more than 200 mcm.
EFFECT: invention is aimed at reduction of energy value, enhanced preventive properties, food and biological value of cake, improved digestibility.
