FIELD: food industry.

SUBSTANCE: while being processed, walnut leaves crushed to the size of particles passing through a sieve with the hole diameter of 1 mm, are extracted by the method of accelerated repercolation with 40% ethanol. The extractions at each stage are merged, the meal is wrung out, the liquids are combined, the extract is settled and filtered. The product obtained is a dark brown liquid with a greenish or reddish tinge and a specific odour, having the following physicochemical indices: dry residue of at least 5%, the sum of naphthoquinones in terms of juglone of not less than 20 mg %, the sum of tannins in terms of gallic acid at least 2%. The extract can be evaporated and dried to obtain a dry extract represented by a powder of a colour from light brown to brown with a greenish tinge, with a weak specific odour, hygroscopic, having the following physicochemical indices: humidity - no more than 5%, content of tanning agents in terms of gallic acid - not less than 5%, content of the sum of naphthoquinones in terms of juglone - not less than 0.01%.

EFFECT: using a group of inventions will allow to obtain a biologically active additive to food and a supplementary source of naphthoquinones.
